Mix butter with egg, sugar and vanilla sugar until fluffy. In another bowl, mix the remaining ingredients and gradually add them to the butter-sugar mixture. If you want, add a little cinnamon.
Preheat oven to 180 degrees. Line two baking trays with baking paper. Remove walnut-sized amounts of dough with a spoon and form into balls with your hands. Place them on the baking sheets at a distance from each other as the cookies will spread apart while baking. Bake the cookies on the middle shelf for about 15 minutes until they are lightly browned. Let the oatmeal cookies cool on the baking sheet.
